* n1/2 cup cocoa
* 1/2 cup boiling water
* 185g butter
* 3 eggs
* 2 cups self raising flour
* 1/2 tspn bicarb soda
* 1 1/2 cups castor sugar
* 3/4 cup milk
* 1 tspn vanilla
Grease a 27cm x 32cm baking dish, and line with paper. Mix cocoa with boiling water, set aside to cool. Cream butter and sugar, add eggs one at a time and beat-in well. Sift flour and soda and gently stir into mixture; add milk and vanilla. When well mixed gradually stir in the cocoa mixture, mixing thoroughly (this cake sometimes curdles at this stage, but this does not spoil the finished cake). Turn into dish and bake in a moderate oven for 30-35 minutes. Allow to stand for five minutes before turning out onto cooler. bThe cake can be used as a dessert, cut into wedges and topped with cream and strawberries.
