
Hopefully you are feeling great today, after a long day of partying! Don't get too relaxed though, there is still a couple of days left of this holiday weekend! Now you may need a pick me up and since it is quite hot out there, you may want to cool off too!
Since it is National Coffee ice cream day, today, this is a perfect treat to cool off and maybe get a slight pick-me-up, too! Now remember to make enough so you can share it with your friends. Then bake the cookies, make the ice cream (in advance) and have the chocolate sauce made and then make a super wild munchie featuring all three... my Maui Wowie coffee ice cream sundae with my spiced rum chocolate sauce. You could definitely say it is time for a multiple "MJM Mouthgasm"! Have some more fun today and make these recipes and then really get ready to have some real fun... in your mouth!
Coffee ice cream recipe
2 cups whole milk
2 cups heavy cream
3/4 cup granulated sugar
2 tablespoons instant coffee granules
6 egg yolks
Chocolate curls, for garnish (optional)
Directions
Combine the cream, milk, sugar, and coffee in a medium, heavy saucepan. Bring to a gentle boil over medium heat. Remove from the heat.
Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.
Remove from the refrigerator and pour into the bowl of an ice cream machine, check out this link if you do not have one... ice cream machine. Freeze according to the manufacturer's instructions. After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. Garnish with chocolate curls.
Hey, it is still Labor day weekend, so relax and enjoy your time off! For those of us that have lost our jobs, our business... our opportunity to create an income for ourselves and our families, well , please do not despair. Have faith and trust that these times in your life will change. These times are test for many of us and this is where true "faith and trust" come into play. It is up to US to create a positive attitude in our lives. If you have a positive attitude, if you are grateful for the blessings you do have, and believe me, we all having blessings to be thankful for, then the Universe in all of its glory will shower you with more blessings.
Start dreaming again, do not feel bad or discouraged. What is important... is how you FEEL! If you feel worthy, if you feel that YOU deserve the best, than that is what you will get. What you receive in life is all based on how you FEEL! So start FEELING good about yourself and then the world will "Smile" on you! Do not let these challenges in life overwhelm you... do not get "all caught up" in what is happening now. If you keep thinking about what you don't have, then the future will keep giving you more of those things. It is definitely challenging... but aren't you up for the challenge?!
